We are a small family run grower-producer in the beautiful rural Huon Valley in Southern Tasmania. It is a region renowned for clean air, stunning landscapes - and outstanding fresh produce grown and crafted by the many local artisan producers in our farming community. With this as our backdrop, we are inspired to grow our premium purple garlic, and from this great produce create our delicious, versatile and super-healthy black garlic. Tasmanian Black Garlic has tender black sweet flesh and a texture similar to soft dried fruit. The taste is completely unique and delicious - sweet meets savoury, a hint of reduced balsamic vinegar and tamarind with tangy garlic undertones... an inspiring ancient invention that has long been part of the asian culture, and is now available from the island well known for premium produce. Benefits of black garlic Fresh garlic is packed with high concentrations of sulphur-containing compounds - the source of its health benefits. One compound in particular, s-allycysteine, is a derivative of the amino acid cysteine, which could help lower cholesterol levels. During the fermentation process, the compound allicine (which gives raw garlic its distinctive odour) is turned into s-allcysteine, this is water soluble, which means it is absorbed more quickly and easily by the body. The natural compound s-allylcysteine (SAC) assists in absorption of (the fat soluble) allicin. This is found in greater concentrations in black garlic than white. Rich in antioxidants Antioxidants are essential for our immune system as well as preventing and repairing damage to the body s cells. Black garlic has been found to have twice the antioxidant properties of raw garlic. Antioxidants protect the cells from disease and are thought to slow down the aging process. Because black garlic is so potent, the heightened levels of antioxidants offering protection from free radical damage make it an ideal food for thwarting chronic disease. Black garlic could also help lower cholesterol levels, and may offer some protection against infections as it s a natural antibiotic. Black garlic can also have a positive impact on blood pressure and circulation in the body. So in a nutshell, Tasmanian Black Garlic not only tastes really great, but its really good for you too! Each bulb is inspected prior to and following the ageing process and only the best bulbs are offered for sale.

As this is a natural product, and the fermentation process is not an exact science, there may be subtle variations in colour, texture and flavour in the batches are garlic. Any under-fermented stock (light brown) inadvertently supplied will be happily replaced, we do however try very hard to ensure under-fermented stock is not dispatched.
