Peter and Marlies Eicher, Saluté Oliva Established in 2000 by Peter and Marlies Eicher. Saluté Oliva is a family-owned and operated olive business that produces first class Extra Virgin Olive Oil and Table Olives. We moved to Australia from Switzerland in the late 1980s. Until 2004 we lived in Melbourne and worked as engineers. Having a real interest in quality food and also the desire to bring up a family in the country and be a part of a friendly, tight-knit community, an olive grove in Boort made a lot of sense. We purchased an 11ha piece of land near town in 1998. Being very passionate about how food is produced, sold and used in our every day cooking, all our products are organic certified with NASAA. Being a family business means doing all jobs the farm requires. The harvest starts in early April with hand picking table olives. First we pick the green Manzanillo olives, which we cure in salt brine to the Sicilian style. Later in April follows the hand picking of black Kalamata olives again cured in salt brine. We won the champion trophy with the Kalamata olive at the 2012 Royal Melbourne show. A few weeks later we pick some very ripe Kalamata or Manzanillo olives which we cure in barrels with salt to produce our semi dried olive. This olive won the Champion trophy at the 2010 Royal Melbourne show for best olive on show. To harvest oil olives we are using a shaker. This allows for a very quick turnaround from olives to oil, which is essential for top quality extra virgin olive oil. The variety we grow for oil is called Frantoio, which tastes very fresh and fruity and produces a medium style oil. All extra virgin olive oil is pressed on site by centrifugal extraction. Other products we produce are olive oil soap and a variety of jams and chutneys from our own fruit trees. We are promoting and selling our products through farmers markets and food and wine festivals. The farm is open for visitors by pre-arrangement.
