    Restdown Wines is a small boutique winery and vineyard in southern NSW, just outside the Murray river town of Barham. The 17 acre vineyard produces full flavoured, premium, fruit driven wines and verjus without the use of chemicals or artificial fertilisers, reinforcing the idea that great wine and verjus is made in the vineyard.

    We have recently begun producing verjus, which is a wonderful cooking product, used to enhance the flavours of both sweet and savoury dishes. The flavour is citrusy with a hint of sweetness. It's great for poaching and deglazing, as a base for sauces and dressings and for giving roasted or pan-fried meats a bit of a zing. Just splash it on towards the end of the cooking process for a real taste sensation!
