    This bundle includes
    1 Jar (15g) - Hand picked, naturally dried culinary lavender...definitely no chemicals! When the recipe needs a special 'lift' why not try some dried lavender flowers grown especially for baking. Used like any dried herb, it will add zest to any sweet or savoury recipe. Packaged in a glass jar for ease of use. Stored in a cool, dark cupboard, it will last for years.

    1 bottle (12ml) Lavender Cooking Essence - Ideal for use in jams, icecreams, cakes, casseroles, breads.....in fact any kitchen sweet or savoury creation you can think of. Use for when you don't need the flowers to be visible but still want the lavender taste. Stores well with cap on tightly and in a cool, dark cupboard for years.

    Sample recipes:
    Lavender Shortbread

    Ingredients:
    • 225g plain flour • 115g castor sugar
    • 250g softened butter • 115g rice flour
    • 1 ½ tablespoons of Mt Baimbridge Lavender culinary lavender
    Method:
    Sift the flours together. Add Mt Baimbridge Lavender culinary lavender and sugar. Rub in butter and knead into a smooth dough. Turn onto a floured board and shape as desired (in a large round, cut into fingers, round balls flattened) . Prick with a fork and sprinkle with castor sugar. Bake at 160°C for 30 – 45 minutes.

    Blueberry and Lavender Muffins
    Ingredients:
    • 2 cups self–raising flour
    • 1 tablespoon Mt Baimbridge Lavender culinary lavender (alternately: 1tspn culinary lavender plus 1 drop of lavender cooking essence)
    • 1 ½ cups blueberries (fresh or frozen)
    • ½ cup sugar
    • 1 cup plain yoghurt
    • 1 egg
    • ½ cup milk
    • 2 ½ tablespoons melted butter
    Method:
    Lightly beat the egg and mix with the yoghurt and butter (and lavender cooking essence, if using). In another bowl, mix the flour, Mt Baimbridge Lavender culinary lavender, blueberries and sugar together. Add the egg mixture to the dry ingredients and stir together. Stir in the milk. Spoon the muffin mixture into a greased muffin pan. Bake at 190°C for approximately 20 minutes. Makes 12 muffins.

    The boutique lavender farm, Mt Baimbridge Lavender, was started in 1997 in Hamilton, Western Victoria. This is where the lavender is grown using organic principles, with the harvest of the sweet lavender flowers by traditional methods only done once a year in December / January so occasionally we do have a limited supply.
