- 400gm The Black Pig Leg ham thinly sliced
- 300gm Double Brie
- 16 sprigs of thyme – leaves only
- 1 x shallot, thinly sliced
- Zest of ¼ lemon
- 8 pieces of good quality bread of you choice
- Salt &Pepper
Butter your bread on the outside face that will be touching the hot plate
Build your sandwich starting with a layer of ham, then a layer of brie. Sprinkle the cheese with a tiny pinch of Murray salt, thyme leaves, shallot and lemon zest.
Add a top layer of ham and place on the toastie maker butter side to the heat.
Wait until the outside is crispy and the brie is starting to ooze out of the sandwich.
Cut and serve immediately with a glass of Pinot Grigio.
** Add some shaved truffle to make this the most luxurious sandwich ever.
** Feel free to substitute any kind of cheese you like.
