Ingredients
Caramelised onions
2 medium onions, thinly sliced
Dash apple cider vinegar
Macadamia nut oil
Pepper and salt to taste
Macadamia Nut Hummus
1 cup rawmacadamia nuts, soaked for 24 hours, drained and rinsed
1 tablespoon of roasted macadamia nuts, chopped
2 tablespoons macadamia nut butter
2-3 garlic cloves
2 tablespoons tahini
Lemon juice to taste
Pinch of cayenne pepper or your favourite spice lemon myrtle is lovely too
Dash of water
Method
1. Place pan on a high heat and coat with macadamia nut oil. Add dash or 2 of apple cider vinegar and the sliced onions and turn pan down to low.
2. Simmer until onions turn soft and caramelised.
3. Set aside to cool.
4. Once onions are cooled, combine all ingredients in a food processor and blend until smooth.
5. Serve with apple slices, rice cakes or toasted Turkish bread. Hummus can also be popped in the oven for 5-10 mins before serving for a warm version.
