2008 Shiraz
94 points in James Halliday’s 2011 Wine Companion ...a truly delicious wine This fine, elegant 2008 Shiraz is an excellent expression of our terroir. You’ll find hints of red cherry flavours, followed by supple tannins and a bright aromatic finish - and you may taste the wonderful granitic character the Ranges’ ancient rhyodacite soils coming through! Good acidity gives the fruit that lovely juicy character.
The Shiraz is crushed into a small open tub fermented and immediately inoculated with a neutral yeast strain. Tubs are hand plunged during fermentation and the wine left on skins for 15 days. Natural malolactic fermentation occurs in the barrel after pressing and wine remains on the lees for some 16 months, in French oak of which 30% is new French oak. A minimal pad filtration is performed on the way to bottling.
